Carol Louise Eich

January 29, 1946 — February 27, 2022

Carol Louise Eich, 76, went to be with Jesus on February 27, 2022, in Portland, Oregon, where she had been battling lung cancer since 2017. Her last week of life she was connected with many loved ones and family by her side. She is now reunited with her son, Sean, and her husband, Gary.

Carol was born on January 29, 1946, in Missoula, Montana. She graduated from Sandpoint High School. She married Gary Eich on July 4, 1963 in Coeur d'Alene, Idaho. They moved on a farm in Selle Valley and were married for 55 years and they raised their two children, Debra and Sean. She drove the school bus for many years and was a homemaker.

She enjoyed spending time in Portland to see her grandchildren's sporting events, and plays, and family was extremely important to her. In addition, she loved traveling to Southern California as she loved seeing her brothers and also being near the ocean … Laguna Beach was her favorite beach. Also she was known for being an excellent cook and everybody loved her “Grandma Hotcakes” (Swedish pancakes) amongst anything she cooked it was amazing. She was an avid gardner, and she had a flair for fashion and was always dressed in style.

She is survived her daughter, Debra; and grandchildren, Rickie, Brooke, Ashley, Christopher, and Haley Shaver and four great-grandchildren, in Portland; her brothers, Jerry Pedersen in Kalispell Montana, Jack Pederson in Colburn, Idaho, Donnie Pedersen in Ontario, California, and Denny Pedersen in Irvine, California. She is preceded in death by her parents, Robert and Lily Pedersen; two of her brothers, Billy and Duane Pedersen, her husband, Gary Eich; and her beloved son, Sean Eich.
